Our annual industry symposium is set for March 20-22, 2025 in St. Augustine / Vilano Beach, FL. The welcome reception kicks off at 5:30 PM, Thursday, March 20 and the closing party — you may know it as the Shuck and Tell — wraps up at 9:30 PM on Saturday, March 22.

The Symposium is where we bring together producers, gear suppliers, distributors, chefs, food writers, vendors, researchers, students and managers from the southeast and Gulf coast regions to discuss pressing issues and relevant, practical research on oyster aquaculture. The weekend is hosted by yours truly, Oyster South, a 501(c)(3) charitable organization that connects communities and provides resources to foster the success of oyster farming in the southern United States. The Symposium is geared toward industry members and folks in aquaculture-adjacent fields.
