Let your oyster compass be your guide

Oyster South, funded by the National Marine Fisheries Saltonstall-Kennedy program, is able to offer free training courses for servers at seafood restaurants from Maryland to Texas and select cities around the country. Oyster South is partnered with the Virginia Institute of Marine Science, University of Georgia and the University of Florida.

With the growth of oyster farming in the southern US, there’s been an explosion in the number of varieties available. Of course, your customers’ questions have also increased - and they are asking your shuckers and servers!

To help, we offer Oyster Essentials to seafood servers and shuckers to help them 1) explain how and why oyster varieties differ 2) understand the sustainability of oyster farming and 3) answer customers’ questions about oysters. We believe that confident, knowledgeable servers will increase your oyster sales.

Our course is typically delivered during the pre-dinner server session, though we can coordinate other times. Ranging from 20 minutes to an hour, we can tailor the training to the time you allot. The training is highly interactive and informal, with participants actively engaged with comments and questions.
